Pork Chop Baked with Apple and Sweet Potato

Don't have a lot of time to cook? Try this one out. It's a winner!

1 lean boneless pork loin
1 medium sweet potato
1 medium apple

Preheat oven to 350
Slice the sweet potato thinly. Quarter, core, and slice the apple into eight pieces.
On a large piece of foil, layer sweet potato slices, pork chop, and then apple slices. If desired (I desire), sprinkle with cinnamon, salt, and pepper (I only do the cinnamon).
Wrap well and bake for 40 min. (That's what the directions say, but I usually have to bake mine for 1 hour)

Super yummy and moist! I don't know about you, but a lot of Pork Chop recipes I've tried make the meat dry. This has a moist, sweet flavor to it.

    Granny Smith yes, but I've used other ones too.

    I put it on a cookie sheet. You could try just laying it on the oven, but I hate it when things leak in my oven.

    Apis arrived last night along with two nieces and and Aunt Julie. The Julie that is a challenge participant kind of.

    Apis and I will head to the gym this morning and then join Samantha and Audrey for lunch. Someone will have to post about our lunch and dinner. Hopefully we will be able to stay in our calorie range.

    Tonight we are going to have Turkey burgers (no buns) with mango salsa,sweet potato fries and a spinich/strawberry salad.

  7. Sue- I'm so glad you liked it. It's one of my favorite's but my kids don't care for it to much. I make them gag it down. I'm in the process of making them get out of their comfort zone.
