This was my lunch yesterday and today. The recipe called for corn instead of garbanzo beans, but I opted for the beans to get more protein in. So yummy. A bit high in cals because of of the avacado and the garbanzos. What I really want you to drool over is all that roughly chopped cilantro. That and a tablespoon of this dressing made my day:
Juice of 1 lime 3 tbsp vegetable oil 1 tbsp honey Sea salt and fresh cracked pepper, to taste 1 clove garlic, minced Dash of cayenne pepper
