Cilantro + lime = heaven
This was my lunch yesterday and today. The recipe called for corn instead of garbanzo beans, but I opted for the beans to get more protein in. So yummy. A bit high in cals because of of the avacado and the garbanzos. What I really want you to drool over is all that roughly chopped cilantro. That and a tablespoon of this dressing made my day:
Juice of 1 lime
3 tbsp vegetable oil
1 tbsp honey
Sea salt and fresh cracked pepper, to taste
1 clove garlic, minced
Dash of cayenne pepper
I would love other recipes with cilantro and lime! Samantha, the improved plating presentation is just for you!

I have to ask if that's your wedding china? Is it Wedgewood? I love it! And the salad looks yummy too. I made a totally improv lunch today of diced chicken, cukes, tomatoes, corn and white kidney beans with cumin over leftover brown rice. It was yum!

ReplyDeleteI LOVE CILANTRO. THAT'S PROBABLY WHY I LOVE GOING TO CHIPOTLE SO MUCH. I HAVE A HARD TIME GROWING IT THOUGH. I CURRENTLY HAVE A HUGE JAR OF LIMES ON MY KITCHEN TABLE THAT I CAN JUST GRAB FOR SOMETHING YUMMY. I THINK I'M GOING TO MAKE THAT SALAD!
