Lunch

Well here's the sad truth. My lunches are almost invariably leftovers. Whatever anyone else doesn't want to eat, I eat. Mostly because I can't stand waste, but also because it's easy. Yesterday (pictured) it was refried beans, homemade salsa, a green salad, and sauted onions and bell peppers with a slice of turkey lunchmeat on whole wheat. Boring, I know! But I got a few containers emptied and outta my fridge.

  2. Hmmm, I do eat left overs but you know that I don't have a problem throwing things out. I try to make lunch somewhat good because I have total control over it I don't have to worry about fixing something that makes someone else happy so if I made something good, left overs are a bonus, or they can be turned into something else yummy. Your left overs looked yummy.

  3. I love leftovers, too. The work has already been done!! In fact, if the meal was good enough (like lasagna), it's a race the next day to see who can eat the leftovers. Sometimes there is even irritation over it, "Who ate all the chicken soup?!!" In our family, we call my husband "The Goat." He will eat practically anything, and if there are leftovers that no one else will eat, he'll take care of it. He's the master of bottled sauces, and makes the most interesting concoctions out of leftovers. Sometimes they're even edible.

  4. I bring leftovers to work for lunch. It is cheaper and better for me. So I am all for leftovers. :)
