My Sunday Afternoon Lunch

I've become less and less of a homemade sandwich fan. I could eat a PotBelly Sandwich everyday, something about yummy bread. However who can do that, I surely can't. So here
is my lunch from today. I'm a huge fan of wheat thins at only 100 calories, but I have to toast them. I think I have a soft bread issue when it comes to sandwiches.

This yummy sandwich consisted of a wheat thin, two thick slices of deli turkey, red onion, spinach and cucumbers from my garden. But my new favorite trick is Laughing Cow Wedges at only 35 calories a pop. It serves as cheese and I can also emit mayo because it is creamy and adds the needed wetness to a sandwich.I finished off my lunch with 100 calories of BBQ Baked Lays, one of my favorites, a peach, dang these peaches are good this year and a Vita Water Zero. This is my trick for not having my Diet Coke everyday.

This lunch was very filling, and had a great balance of carbs, protein, fruits and veggies! YeeHaW!

  2. I keep forgetting to add red onion to my sandwich. Need to do that to give it some umph! That peach looks succulent and perfect. That lunch could be served at a deli, it looks so picture perfect.

  3. I am so jealous of your flavored Laughing Cow cheese! I'm going to have to see if I can find that flavor at my local grocery store. I, too, love laughing cow spread on a sandwich. For 35 calories, you get an awesome cheese flavor without all the fat. Yum!!

  5. Love me some sandwich thins and Laughing Cow! I've been giving my sandwiches a little zing with green onions from my garden. Yum!
