Ms. Thunderbumper Challenge #1 Fall Veggies

It's fall which means there are a whole lot of new vegetables showing up in the grocery store. Are you using them or do you stick with the same old stand bys? Well it's time to try something new. Ok, it doesn't have to be something new but it needs to be something that you wouldn't eat during spring/summer.

For 5 points tell us about what you do with it. Main meal, soup, side?

  2. I've already got a spaghetti squash eyeing me on the counter. Just gotta figure out what to do with it?!

  3. I made a KILLER veggie lasagna last night! You all know how to make a lasagna, but here's the highlights of mine. Whole wheat lasagna noodles. Low fat ricotta. I put cooked chicken breast (my man wanted PROTEIN!), carrots, onion, garlic, brocolli, kale, and some zucchini (I found in my freezer) in the food processor and cut them up into smithereens! I then mixed my veggie bits and chicken in with the ricotta, some egg whites, and a little parmesean cheese and layered my lasagna. I put a little spaghetti sauce on top for moisture. MAN! was it yummy. The kids loved it. I think almost any fall veggie would work well this way.

    I also made kale chips last week. I googled a recipe after seeing it talked about on the Today show. They were really yummy. My tip: use very little salt, surprisingly, the kale tastes really good on it's own. Kale is amazingly good for you. I had 5 kids at my house at the time when I made them, and they all loved them!!

  4. I used my spaghetti squash as noodles. It didn't work out quite as I wanted. I wanted to put in the kids meal with half noodles and half squash. I went for a walk with my mom last night, and my husband put them on the sides. The kids didn't touch it. But, I ate mine like spaghetti with meatballs and sauce on top. It was yummy!
