Quick Asian-inspired veggie

Another quick and easy "out there" veggie to try: baby bok choy. I just had a plateful for lunch. Total time from start to finish: 7 minutes. I cut the ginger coarsely, instead of mincing.

Two baby bok choys (cut off green tops, wash)
1 t sesame oil
1/2 t sesame seeds
1 t fresh ginger minced
tamari to taste

Saute for about 4 minutes, until bok choy is softened.

Up next week: swiss chard? a new root vegetable?

  3. I'm with Samantha, I'd have to add some protein, but it looks really yummy. I don't know as I've ever seen baby bok choy. I'm off to Wegmans I'm sure they have it.
