All vegetables are lovable when treated right



I keep thinking I'm getting close to eating all the veggies in the produce section and then I look around and realize I've been playing it safe, sticking with the standards, not going too far out of my veggie comfort zone. So, today I added these two beauties to my cart. A bit out of my comfort zone and here's why: 've had cauliflower before. So have my kids. But I've never found a recipe that they like that isn't covered in cheese or white sauce. There must be one out there and I'm guessing it involves roasting. So I'm going to scour the net and find it...unless you've already got it and will share it with me. Did you know that in French, calling someone a "chou-fleur" is a term of endearment? {Kind of like Americans calling their sweeties "pumpkin." Veggies rule!}.

Now as to the squash, one of the things I like about this particular variety is that it's called butternut squash. I love butter and I love nuts. So, I am bound and determined to love this squash. I have never made anything with the butternut variety, only the acorn variety. It will make a cameo appearance in a fall salad later this week, then will likely be the feature performer in a soup.

As much as I love vegetables, I have a knock-kneed weakness for chocolate chip cookies and I'm experimenting with recipes, trying to find the perfect one (to enter into a local bake-off). If you find, taste, know of a good one, please let me know. And yes, I'll be giving away lot of cookies this winter/fall because if they're in the house, well, it's beyond my control.

  2. OH MY, I LOVE LOVE LOVE butternut squash. It's the dessert veggie! It's a staple for me. I love to peel it, scoop out the seeds, chop it up and boil it till tender. Then I drain it, mash it up with a little brown sugar, and gobble it up. My whole family will eat this. Yum Yum! Actually, I think I will cook mine today!

  3. I would love a great cauliflower recipe so when you find that perfect one please share it with us. I must admit I don't believe I have ever had butternut squash. Can't wait to see the recipe on that one either.

  4. Emily Shafenberg makes the best chocolate chip cookies on earth and one of her secrets is extra salt and extra vanilla. (Em are you gonna kill me for spilling the beans?)

  5. These are two of my favorite veggies of the past year. Both of them are great roasted.

    The butternut squash I toss with olive oil and salt and then roast them up.


    The cauliflower is olive oil, salt, pepper, anything else that sounds yummy and then sprinkle with Parmesan cheese for the last 20 minutes or so.

    SUPPER YUMMY!

    I'm also a huge fan of butternut squash ravioli.

  6. Good grief!! I just had to wait until bedtime to read this post about yummy veggies. Sheesh!! Now I have to go out and buy some cauliflower and butternut squash tomorrow. And, I feel some awesome veggie soup coming on later this week. Yum!! Thanks everyone for the inspiration!!

  8. I love the squash. It is tooo good roasted kinda like sweet potato fries that are roasted and taste so fine. Makes me hungry just talking about them. I grilled a big zuccinni yesterday and it was wonderful.
