It's pretty yummy, mostly because it soaks up whatever you cook it in. It's also a lot hardier than spinach, and holds up better in soups. Have you ever had Olive Garden's soup called (I think) Zuppa Toscana? Potatoe-y and Sausage-y and absolutely delicious?
